Fall brings to mind back-to-school, changing leaves, cooler temperatures and FOOTBALL! If you are a fan like me, I’m sure you are hoping your favorite team prevails! (Go Pats!)

Here in Boston, we love our Sports Teams and are also a big fan of tailgating. It’s so much fun to get together with friends before the game with delicious grilled burgers and sides perfectly complemented by Frito-Lay snacks.

Whether you’re planning a huge football fiesta at home or heading out to the stadium for crazy tailgating fun, there are always new ideas to help spice up your party.

On Thursday, September 6,  Frito–Lay Kitchen Kings Executive Chef Stephen Kalil and Chef Jody Denton will share their favorite tailgating tips that will liven up your football fun.

Frito-Lay would love to offer one of my readers the chance to win the Ultimate Tailgating Prize Pack (value $75-$100).

How this will work is that everyone who submits a cooking, grilling or tailgating tip or question below this post will be entered to win! (Up to 5 questions or tips per person – each counting as one entry).

In addition, Chef Kalil and Chef Denton will answer some of your questions on tape (to be posted after their interview).

    My biggest tip is safety first. Use freeze packs instead of ice for coolers. Do not take mayo based products because they’ll sit out in the sun and could go rancid. Don’t do deviled eggs. Plan as much ahead of time as possible. Plan grilling so everything can go on at the same time. Remember portable timers so you can time the grilling. Pack lots of little cleaning rag/washcloths (as long as they’re not nasty). You can always use more. Use jarred items like pickles and hot cauliflower etc because they’re easy to serve and this gives you more time for your guests.

    When I cook kabobs, I like to skewer the same things together on each skewer – all chicken, all shrimp, all mushrooms, all onions, all tomatoes etc. I get more even, consistent cooking.

    Is there a good rule of thumb “timing” for cooking chicken parts on the bone to make sure they’re cook through entirely or do you suggest using a meat thermometer? I’m always afraid chicken will be pink if I don’t cook it long enough and/or dry if I cook it too long on the grill. Would love a suggestion on how to cook the perfect tender chicken on the bone on the grill.

    I’ve never tailgated, but for grilling and parties I recommend preparing all your meats and food the night before. Make sure your grill is clean and full of gas (if you have a gas grill).

    Awesome corn on the cob is super easy to make on the grille. Just dunk non husked pieces of water and grille them until the outside husk dries out and turns brown.

    Chicken wings on the grill are absolutely my all time favorite for anytime, and especially gameday! My best tip for easier clean-up of the grill is to use Aluminum Foil on the grill. It won’t affect cooking time and the food will turn out great, plus the sauce will be quick and easy to clean up!

    TIP: Want Cheeseburgers on the grill but tired of the melting cheese dripping everywhere? Make two smaller meat patties, place cheese in the center of one, place the next pattie on top and seal edges. Grill as usual. Cheese stays INSIDE the patties and there is no mess!

    Tip: To get the perfect timing on a steak’s doneness (is that a word?), touch the tip of your thumb to the tip of each finger in turn and poke the meaty area of the base of your thumb, then poke your steak. You can tell by the firmness of the steak compared the firmness of your thumb base whether it’s done to your liking. Thumb to first finger=rare, thumb to middle finger=medium-rare, thumb to ring finger=medium-well, thumb to pinky finger=well done. Thanks!

    Valeen, in order to use a wood grilling plank, you must first soak the plank in water. Cedar should be soaked for 2-5 hours while all other woods should be soaked for at least 6 hours. Once your grill is heated, place planks on the grill with the smooth side face down for about 5 minutes. Turn the plank over and place rough side face down on the grill. Brush oil on the plank – prevents food from sticking – and proceed to place food on plank. Grill until food is cooked thoroughly.

    Bring a large ziplock bag to put used utinsels in. When you are done, put the used ones in the bag to take home and soak. Much easier than trying to clean at a tailgate
